After coming across this blog and seeing her beautiful rainbow cookies, cakes and pancakes, I was excited to try and make something rainbow for my kids.
Well, today here in Kingston, MA, we have a snow day, which means no school, jammies all day AND big smiles! Perfect. I knew these colorful pancakes would bring even bigger smiles to their faces today, so I got started.
While the kids were busy playing in their playroom, I quickly followed this recipe. I divided the batter into 6 little bowls, and dyed each batter bowl using food coloring.
The pancakes looked prettier on the grill than they did when they were fully cooked. I think the trick is to NOT overcook them because you will lose some of the color, AND that is very hard for me since I ALWAYS burn pancakes. Luckily for me though, my husband assisted…he said “it’s all in the bubbles baby, it’s all in the bubbles” LOL.
The kids were THRILLED when I called them into the kitchen and they saw the two rainbow stacks! They dove right in ! Daddy was even excited to try them.
These pancakes were really easy, fun and SO yummy. Not to mention, they put a smile on each one of our faces and THAT is worth the little extra effort that went into making them.
I was very surprised at the small amount of sugar there is in the recipe, well, that is until you add all of that sugary syrup ! Delicious !
